Happy Easter readers!! Don't you just love that at this time of year, you can stuff yourself with chocolate and no one complains about it? Yup, me too. I've been itching to bake these cute chocolate cupcakes full off Cadbury goodness, because it's the best brand of chocolate ever. These are super easy and you can bake them today or tomorrow - whenever you fancy really. It's a tweaked recipe from another post on here, but with loads of Easter goodness. Enjoy!
001: Ingredients:
Makes 12 cupcakes
115g caster sugar
115g self raising flour
115g softened butter (I used margarine)
2 eggs
2 table spoons of cocoa powder
two or three packs of mini eggs
a large bar of dairy milk
four bars of flake
002: Method:
1. Firstly, set your oven to 180 degrees celcius (Gas Mark 4)
2. Measure out the butter and caster sugar. Put them in the bowl and mix with the whisk.
3. Crack the two eggs and add them in and whisk as well. Add two tablespoons of cocoa powder. Whisk until brown.
4. Measure the flour and using a sieve, put a bit in the bowl, and using a wooden spoon, fold the flour in so the mixture becomes light. Do this three times, till the flour is gone.
5. Get your cupcake baking tray and cases, and using a spoon, put a table spoon of the mixture into each case. What's left, scoop in generously to random cups.
6. Put them in the oven for 20 minutes.
7. When they're done, take them out, and leave to cool for up to 30 minutes.
8. While you're waiting, boil the kettle, put the hot water into a pan on the stove. Put a bowl in the pan, but make sure it doesn't touch the water. Open the packs of chocolate, melt the bar and bash or cut the flake into bits.
9. When it's melted, add a spoonful to each cake. Then sprinkle the flake on and add extra melted chocolate to put the two mini eggs on. Essentially like glue.
10. Leave to set, and then it's done. Share with the whole family and have a good Easter!

Deleteoh wow. they look amazing. i made mini egg muffins on easter and they were so good but i'm gonna try this recipe for sure. even though easter is basically over now.

Well Easter chocs are half price now so there's no better time than now to try it! :) the best pack of mini eggs you can get is from Lidl because you can get the family size and still have loads left to scoff haha
