Take that Starbucks!
There comes a time when you can be bored of both cookies and brownies, and as it was my mum's birthday recently, I decided to shake things up by baking chocolate chip shortbread. I looked to Tanya Burr's baking book again - because let's be real, it's pretty legendary! After a few fustrating rolls with the dough (which you'll see in my video at the end of the post) it turned out pretty good. It's a super simple recipe you guys can try - you just have to master the rolling haha. I did tweak the recipe to just include milk chips, but you can also add white. Here's the recipe below - enjoy!
001: Ingredients:
250g plain flour
75g caster sugar
175g cold butter
150g milk chocolate chips
golden caster sugar for sprinkling
002: Method:
1. Preheat your oven to 180 degrees celcius and line two baking trays with greaseproof paper.
2. Measure out the flour and caster sugar and mix together in a bowl.
3. Cut the measured butter into squares and mix into the dry ingredients with your fingers until they form breadcrumbs.
4. Add the chocolate chips and combine with the mixture until a dough forms.
5. On a lightly floured surface, place the dough on top and roll to 1.5cm thick, cut into triangles or squares and lay on a baking tray.
6. Bake for 15-20 mins or until golden brown, take out of the oven and while still warm, sprinkle a little golden caster sugar on top. Then leave to cool.
