American Style Fluffy Pancakes

A cheeky extra post from me today because it's Shrove Tuesday, which means pancakes and I created these gorgeous American style ones literally an hour ago. If you're planning to make these soon, or after work/school/uni, then this is the easiest recipe ever! Literally. I made these for the first time and they turned out so well. While giving some love to the baking side of my blog, here's the pancake recipe of your dreams....

Note: I used recipes from Jamie Oliver, Zoella and Poppy Deyes so this isn't entirely my own recipe.

001: Ingredients:
Makes 6 pancakes

3 large eggs
110g plain flour
1 table spoon baking powder
one pinch salt
140ml milk

For the toppings

frozen summer fruit
honey

002: Method:

1. Seperate the egg whites and yolk into two separate bowls.

2. Mix the flour, baking powder and milk in with the yolks until they form a batter.

3. Whisk the egg whites and pinch of salt until stiff peaks are formed.

4. Fold in the whisked whites into the batter mixture and be careful not to lose too much air.

5. On a medium to low heat, heat up a small non-stick frying pan. Use a ladle and pour in mixture - about a ladle full for each pancake - and wait until one side is golden brown and the top surface starts to pop. Flip and repeat for each pancake.

6. You can put some frozen fruit in a saucepan and heat until they're squishy and the juice is nice and thick. You can add a dash of water if you want to.

7. Pile how many pancakes you want onto a plate, add the compote and extra frozen fruit, then drizzle with honey. You can use syrup, nutella or whatever you want for your toppings!!
