Oh, look at me now posting every day again... I feel so much more inspired, and when I decided to bake this lemon drizzle loaf from Tanya Burr's first book (because her baking book is out today - and I'm going to buy it tomorrow!) I knew I wanted to write about it here. This recipe is perfect for the summer as it's full of citrusy goodness, I mean, we put two lemons in this cake and more! It's also super easy and quick to prepare, plus it allowed me to put my new loaf tin to use and make a boring afternoon fun. Enough rambling, here's the full recipe, and full credit to Tanya and her skills!
001: Ingredients:
Cake:
170g self raising flour
1 teaspoon baking powder
3 eggs
170g butter/margarine
170g caster sugar
zest of 2 lemons
Icing:
150g icing sugar
juice of 2 lemons
002: Method:
1. Set your oven to 180 degrees celcius (Gas Mark Four)
2. Measure all ingredients for the loaf and mix together in a large bowl. And that's your batter!
3. Grease and line a loaf tin with baking paper and pour the mixture in, even out and place in oven.
4. Bake for 45 minutes, then test if it's cooked by sticking a knife in. If it comes out clean, it's ready!
5. For the icing, measure and put icing in a bowl. Squeeze all the juices out of the lemon and mix till the sugar is dissolved and it becomes a watery consistency.
6. When the cake is still hot, spike holes with a knife all over and then pour the drizzle all over the loaf. It will run off, but I used a spoon to scoop it repeatedly over until most of it sunk into the cake.
7. Leave to cool and the icing to set, then serve and enjoy. Or just eat it for yourself.

This looks so good - I love lemon drizzle cake and haven't had it in ages. I usually store-buy mine, because i'm lazy, but this one looks much better haha.
