Blueberry Muffins

If you don't know by now, I love baking and *touch wood* not one of my baking ventures has been a fail - even if I'm baking it for the first time and am quite scared. Whenever I think about baking, I think about a cottage in the summer surrounded by fields and beautiful flowers. (Am I weird?) Yesterday I decided to treat my mum and bake her some muffins, and as it was a first time bake, I was quite proud of myself! They're super easy and feel like a lovely spring treat, so why not whip them up for yourself?

001: Ingredients:
Makes 12 Muffins

280g plain flour
1 table spoon baking powder
one pinch salt
115g soft light brown sugar
150g frozen blueberries
2 large eggs
250ml milk
85g unsalted melted and cooled butter
1 tea spoon vanilla extract (optional)

002: Method:
1. Preheat the oven to 200 degrees celcius/gas mark 6. And place 12 muffin cases into a muffin tin.

2. Sift all together the flour, salt and baking powder into a mixing bowl, and then stir in the sugar and frozen blueberries. (I used a wooden spoon)

3. In a jug beat the eggs lightly and then add the milk, melted butter and vanilla extract and beat further. Try not to over work it.

4. Then, make a well/hole in the middle of your dry ingredients and pour in the beaten ingredients. Stir together until well mixed and no dry flour shows.

5. Spoon the mixture evenly into the muffin cases and bake in the oven for 20 minutes until golden brown. You might see the classic muffin crack on a couple.

6. Leave the muffins to cool and then enjoy alone or with ice cream. Mmmm.
