Foolproof Mince Pies


Easily bake Santa's favourite snack

Guys. It's SERIOUSLY not Christmas without mince pies. And what's better than your average supermarket mince pie? Homemade mince pies that are actually deep filled and not a marketing lie. Wow that got deep...

And this is my first official improvised recipe. A lot of the time I've just been using Tanya Burr recipes, but this time my friends, I took a BBC Food recipe (which I'll link at the end) and completely turned it to suit me.

It's so easy you'll be dying to make your own and to want to taste crumbly sweet pastry with perfect mince meat. That doesn't actually contain meat. I was lied to as a child. Anyways, enough deep thoughts, here's the recipe...

001: Ingredients:

1 jar mincemeat
225g  cold diced butter
350g plain flour
100g golden caster sugar
a pinch of salt
icing sugar for dusting
milk for brushing pastry
12 hole muffin/cupcake tin
rolling pin
pastry cutters

002: Method:

1. Firstly, preheat the oven to fan 180 degrees/Gas Mark 6. In a clean bowl, rub together the butter and flour until breadcrumbs are formed.

2. Then add the golden caster sugar and pinch of salt. Knead until the pastry starts to come together and then shape into a ball. (No need for water or milk to combine!)

3. Transfer to a surface (don't need flour but you CAN lightly dust it if you want) then roll out the pastry until 3-4mm thick. Then with a pastry cutter that roughly matches the size of the cupcake tin holes, punch out the cases then press into each cupcake hole. You can add extra if the case rips.

4. Then add a tablespoon of mincemeat to each case, then roll out the rest of the pastry and cut out two small stars to act as the case topping. If you don't have star cutters, free hand them with a knife like I did.

5. Then with a pastry brush, apply a small amount of milk to the top of the pastry so it becomes shiny and extra golden when baking. (I forgot this so hence non shiny pies in the pic haha) Bake for 20 minutes.

6. Leave to cool for 5 minutes, then transfer to a wire rack to cool and add icing sugar for pretty dusting. Then serve to family or friends - or for yourself...
